Watermelon Salsa

How do you salsa in Summertime? Are you a die hard tomato salsa fan or do you venture into the fruit varieties during the warm weather season? I do both! Love tomato salsa and have it the most throughout the year but come Summertime I love mixing in some fruity varieties when I’m making dishes that are calling for that seasonal sweet and savory flavor. Enter this watermelon salsa so refreshing and delicious to top grilled meats, fish, and tacos, or to enjoy all on its own with chips and guac for a tropical twist.

Makes: approximately 2 1/2 cups salsa

Ingredients:

  • 1 1/2 cups chopped watermelon
  • 1/2 cup chopped cucumber
  • 1 clove minced garlic
  • 1/4 cup minced onion
  • 1/2 jalapeño pepper, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 1 1/2 teaspoons salt and a few grinds fresh black pepper or to taste
  • 1/2 teaspoon sazon, cumin, or coriander if desired
  • A good drizzle of olive oil
  • Chips for serving

Directions:

Combine all the veggies and cilantro in a bowl, add seasonings, lime juice, and drizzle of love oil and mix well. Taste and adjust seasonings as needed. Serve with chips and guac or use to top grilled meats and fish. Delicious!
