Watermelon Mojito

If there was ever a cocktail that watermelon was meant for it has to be the Mojito! I love the pure classic flavor of a mojito so much when it’s done well that I don’t often feel the need to go out of my way to flavor them a million different ways all the time. So when I say that this watermelon flavored mojito is one of my all time favorite versions you know that it’s got serious game! I think it has to do with how gorgeously and effortlessly watermelon, lime, and mint harmonize their flavors together without any one of them competing or taking over the flavor. The result is a perfectly balanced and super refreshing flavor trifecta where each ingredient is distinct but blends together beautifully! Come Summertime when watermelon season is at its peak this is my go to cocktail and it never disappoints. Serve it with anything and everything grilled or chilled and I think you’ll agree that Summer never tasted so good!

Makes: 2 glasses

Ingredients:

For the Mint Simple Syrup: (See notes to swap out with regular sugar)

  • 1 cup granulated sugar
  • 1 cup water
  • Approximately 1/2 cup fresh mint leaves

For the Mojito:

  • 1/4 cup fresh mint leaves — (plus more for garnish and for simple syrup-approx 1 cup total)
  • 1/2 cup watermelon cubes
  • Juice from 2 limes
  • 4oz Bacardi white rum
  • 3 oz simple mint syrup, or adjust to taste (Or 3-4 tablespoons granulated sugar if skipping the simple syrup)
  • Crushed ice
  • Seltzer water 

Directions:

  • If making simple syrup, combine 1 cup sugar and 1 cup water and bringing it to a boil. Stir to let sugar dissolve and add in a handful of fresh mint. Remove from heat and let syrup cool. Once cooled, remove mint leaves and store in fridge for more mojitos. For an extra punch of mint flavor you can also purée the sugar and a few fresh mint leaves in a food processor before boiling to make the simple syrup and add additional fresh mint leaves to steeping the mixture as above. 
  • Divide the mint leaves between each glass. Add 1/4 watermelon cubes, juice of 1 lime, and 1 1/2 ounces mint simple syrup to each glass. (If swapping the simple syrup for regular granulated sugar, added 1-2 tablespoons to the glass depending how sweet you like it.) Muddle mint leaves and watermelon together with lime and syrup to extract juices.
  • Add 2 ounces rum to each glass and stir. 
  • Add crushed ice to each glass and top with seltzer. Garnish each with a chunk of watermelon, more fresh mint leaves and lime wedges for serving.
