Peanut Butter Chocolate Chip “Nice Cream”


A delicious and creamy vegan ice cream that comes together in five minutes with only a couple ingredients thanks to the magic of the star…blended frozen bananas! Slice up those overripe bananas and throw them in the freezer to be ready for you when you want a naturally sweetened healthy ice cream with the most unbelievable soft serve like texture! You can change up the flavors a million ways to make different flavors of this Nice cream and will never have to feel guilty about having a bowl of this for dessert. Even if you’re not a fan of bananas you may very likely become one after you try this game changer ice cream!

Makes: 2 scoops
Time: 5 minutes

Ingredients:

  • 2 sliced frozen bananas
  • 2 tablespoons natural unsweetened peanut butter
  • Small splash of coconut milk, 1 or 2 tablespoons
  • 1-2 tablespoons dark chocolate chips, chopped

Directions:

Place frozen banana slices in a food processor or high speed blender with peanut butter. Blend on high briefly until mixture combines and becomes creamy. (Usually no more than 15-20 seconds needed.) Scrape the the bowl if any chunks cling to the sides. Add a splash of coconut milk and blend again a few seconds. Stir in chopped chocolate, scoop into small bowls and serve!
