- 2 medium apples, peeled and diced

- 2 tablespoon white sugar, (plus more mixed with cinnamon for sprinkling on cookies)
- 2 tablespoon brown sugar
1 1/2 teaspoon apple pie spice (or substitute 1 teaspoon cinnamon and 1/2 teaspoon nutmeg)

Melt butter in sauce pan over medium low heat. Add apples, sugars, and sauces. Sauté a few minutes until apples are softened. Add in a couple tablespoons of caramel sauce if using and reserve the rest for drizzling over cookies.
For Pie Dough:
Roll out pie dough on floured surface. Use 3 inch cookie cutter to cut out 16 circles and place on parchment lined baking sheet. Fill 8 circles with apple pie filling leaving border around edge. Lay another piece right on top and press down edges. Crimp edges with a fork and cut two small slits on top of the dough for each cookie. Brush cookies with egg wash (beaten egg mixed with water) and sprinkle with cinnamon sugar mixture. Bake at 350 for approximately 20 minutes until golden. Let cool then drench with caramel sauce if desired. These cookies are delicious on their own and amazing when used to make ice cream sandwiches!
