Apple Pie Cookies

No time for pie? Make apple pie cookies instead! You can absolutely use pre-made pie dough and store bought caramel sauce to save even more time or click on links below for my easy adaptable homemade recipes for pie dough and caramel that can be made ahead. No need to spend time making these look extra pretty, especially when you drizzle them with gorgeous caramel to get them good and messy. If you’re looking for a fun, delicious shortcut twist on traditional pie, which I always am, this recipe is for you!

Ingredients:

  • 2 medium apples, peeled and diced
  • 1 tablespoon butter
  • 2 tablespoon white sugar, (plus more mixed with cinnamon for sprinkling on cookies)
  • 2 tablespoon brown sugar
    1 1/2 teaspoon apple pie spice (or substitute 1 teaspoon cinnamon and 1/2 teaspoon nutmeg)
  • Pie crust, homemade or store bought (click here to for my go-to gluten free adaptable version)
  • 2 tablespoons caramel, plus more for drizzling on cookies.  (Use homemade or store bought caramel-members click here for my easy and delicious homemade cider caramel or to register and get full access to all recipes click here.) 

Directions:

For Filling:
Melt butter in sauce pan over medium low heat. Add apples, sugars, and sauces. Sauté a few minutes until apples are softened. Add in a couple tablespoons of caramel sauce if using and reserve the rest for drizzling over cookies. 

For Pie Dough:
Roll out pie dough on floured surface. Use 3 inch cookie cutter to cut out 16 circles and place on parchment lined baking sheet. Fill 8 circles with apple pie filling leaving border around edge. Lay another piece right on top and press down edges. Crimp edges with a fork and cut two small slits on top of the dough for each cookie. Brush cookies with egg wash (beaten egg mixed with water) and sprinkle with cinnamon sugar mixture. Bake at 350 for approximately 20 minutes until golden. Let cool then drench with caramel sauce if desired.
